I simply adore pesto for its punchy flavour, versatility and its wealth of nutrients.
It’s a great one for the lunchbox too!
Ingredients
4-5 healthy bunches of basil or other greens (I use coriander, parsley, or mix my herbs, baby spinach or rocket)
1/2 cup pine nuts or pepitas
1/2 cup grated parmesan cheese
1 garlic cloves
Squeeze of lemon
1/4 teaspoon salt
1/4-1/2 cup extra-virgin olive oil
