I have always longed to visit Paris but in the mean time I appreciate what Parisian culture has to offer, especially their culinary delights.
The Little Paris Cafe, situated in the historic and picturesque township of Katoomba in the Blue Mountains, west of Sydney, brings a touch of Paris to my doorstep.
This delightful cafe follows the French way of using seasonal local speciality producers such as Princess Pantry handmade jam, Trunkey Creek Toulouse sausage, bacon & ham and Jannei Chèvre.
Situated just 2 minutes from the Blue Mountains Cultural Centre in the Town Centre Arcade, this cafe should be on your must do list when visiting downtown Katoomba.
Below is an absolute divine recipe for Porcini & Portobello soup that the Little Paris Cafe currently has on offer as we head into the winter months in this part of the world.
PORCINI & PORTOBELLO SOUPE
Ingredients:
100g dried Porcini
1.5kg Portobello (or field) Mushrooms
2 diced onions
1 cup white wine
½ bunch celery
2 diced potatoes
2 bay leaves
2 tsp crushed garlic
2 sprigs thyme
1 ltr cream
1.5 ltr mushroom stock
100g butter
50ml oil
Method:
Soak dried Porcini in boiling water for half an hour, drain and reserve liquid and rehydrated Porcini
Combine butter and oil in large soup pot over low heat, add onion, and simmer 5 mins
Add garlic and Porcini, simmer 5 mins
Add bay leaves, thyme and celery, simmer 5 mins
Add mushrooms, cook until mushrooms produce stock
Add white wine, cook 5 mins
Add cream and stock
Bring to boil, reduce heat, and simmer 1 hour covered
Blend with stick blender
To serve, garnish with crème fraiche and drizzle with extra virgin olive oil and a crusty baguette
